Ever since I was a young child baking has been passion of mine. Whether you are alone, chilling with friends or even just really stressed out and needing a way to relax, baking for me has always been a place for me to go. Baked goods are not just delicious but are also extremely fun to make and when you gift someone something your created with your very own two hands, it makes it that much more special. I have never been one for sports, dance or any of those co-curriculars because I am not all that coordinated, so baking is the way I love to pass the time and is a skill I have been working on for a great number years now. This blog is a place where my love of baking and photography meet hand in hand and is also a place filled with my all time favourite recipes. So join me on my baking journey, it does not matter who you are and why you want to learn, just dive in or "dig in" and lets make some SCRUMPTIOUS food!

Easy Chopped Kale and Quinoa Salad

 

Salad... Easy to make, hard to eat. Salads can be a bit boring and tasteless. So I decided to create a fun, colourful salad which is not just very aesthetically pleasing, but also very yummy! You can tailor this salad to you by adding or replacing vegetables you may or may not like. This salad will make around four meal portions or 6-7 side portions.

Ingredients:

  • 1 cup of cooked Quinoa
  • 4 cups of finely chopped kale
  • 1 cup of spinach
  • 1 cup of frozen peas
  • 1 cup of Red Peppers
  • 1 cup of shredded, cooked chicken 
  • 3/4 a cup of olive oil 
  • 1/4 a cup of balsamic vinegar 
  • Pinch of sea salt
  • pinch of ground pepper
  • 1 Tablespoon of honey or agave 

Directions:

  1. Wash and cook quinoa prior , let cool so it does not wilt the vegetables
  2. Cook 1 cup of frozen peas and let cool (or you  can use fresh ones)
  3. Chop Kale and Red peppers 
  4. Mix kale and spinach in a large salad bowl
  5. Design Peas, chicken and quinoa on top of salad in rows
  6. If you want to use store bought dressing I strongly recommend the one in the photo above!
  7. For the dressing combine olive oil, balsamic vinegar, salt, pepper, and honey 
  8. Drizzle your desired amout of dressing on the salad.
  9. Enjoy!
